Dr. Wendy’s Savory Breakfast (or anytime) Pizza (recipe)

No more cold delivery pizza for breakfast! Breakfast pizzas with specialty ingredients and new flavors are already becoming the hot item on the morning menu. Predicted to be a huge trend, you can make an easy and delicious grab-n-go or sit down artisan version with these fun ingredients. Full of flavor, antioxidants, vitamins, minerals, protein and whole grain fiber, you get great nutrition and energy to last all morning.

 Serves: About 2-4 for breakfast depending on the size of the pizza crust

  • 1 thin-crust whole wheat, ready baked pizza crust (store-bought or 12-15 inch baked round)
  • Olive oil
  • 1/2-3/4 cup part skim ricotta      
  • 3-4 Roma tomatoes, sliced
  • 3-4 figs, sliced top to bottom (fresh if in season and dried are fine, too)
  • 1 large onion, cut in strips
  • Fresh basil, washed and dried, chiffonade (cut in strips)
  • Dried oregano

 

Instructions:

Image about Carmelizing onions | BazilianIn a sauté pan, caramelize the onion for 20-50 minutes on medium high heat in 1-2 tsp olive oil.* Add a 1/4 tsp salt and 1/4 tsp sugar about 10 minutes into cooking the onions. Cook until brown and caramelized to your liking (20-50 minutes). You can add a little more olive oil mid-way to prevent burning but may not need to if you stir every minute or so.

Bake the whole wheat crust according to package instructions, usually 8-10 minutes with a par-baked or homemade crust.

Assemble your pizza by spreading ricotta across the crust. Sprinkle dried oregano liberally across the pizza. Place caramelized onion next and layer Roma tomatoes, figs and fresh basil onto top. Sprinkle more dried oregano if you like.

Slice and enjoy for breakfast (or anytime) on its own or with a piece of fruit.

* I like to caramelize the onions ahead of time – and often make several onions at the same time – when making a dinner meal and refrigerate in a sealed container. They’ll keep for 3-4 days in the refrigerator.
